Our Processing
The pure water from the sources of Mount Faito, the tradition and manual skills of the pasta masters and the use of bronze dies give the pasta a straw yellow color and give it a particular roughness that allows it to retain any type of sauce.
The manufacturing process of our PGI pasta is the result of centuries of experience and tradition. The particular care with which every single phase is checked and executed contributes to the full success of the entire production process and, together with the originality of the shapes resulting from the creativity of the pasta masters, contributes to giving the product exceptional quality.
The production takes place in four phases: the preparation of the dough with water and durum wheat semolina, the extrusion process through the bronze die, the drying in static cells for 24/36 hours, depending on the cut, the packaging within 24h. All the process takes place in our pasta factory, at the foot of the Lattari Mountains, in the heart of Gragnano, as the PGI regulations prescribes.
